Abstract

The theoretical basis of this monograph is the analysis of numerous works of domestic and foreign authors who develop and improve the biotechnology of the production of products for therapeutic and preventive nutrition. In the present work we present information from publications of domestic and foreign authors on the problem under study. This monograph presents the results of our own research on the use of highly active strains in the production of fermented milk products for functional nutrition. It is recommended for bachelors, students, masters, graduate students and specialists engaged in the field of biotechnology and food industry.
