Abstract
Abstract Goats are market economy which is one of the most promising and effective livestock industries. Meat goats for nutritional and taste qualities are not inferior to lamb, they are used to its natural form and processed for meat products. Most breeds of goat’s relative precocity and prolific, so they are bred all over the place. The aim of this research is to study the characteristics of changes in the indices of meat productivity during slaughtering processing, packaging and transferring and consumer properties. Study carried out which is focused for the most highly productive breeding herd of Kazakh grubo sherstnaya goats. Growth & Development of young animals, and studied the results of weighing at birth, 4, 8 and 12 months. Meat productivity was studied through the control of slaughter animals. At the same time determined slaughter live weight of an individual weighing after 24-hour exposure hungry. During the period from 2 to 8 month age pre slaughter live weight were increased to 14.71 kg, or 2.27 times much than 2 months aged and mass of the pair at the carcasses were 6.90 kg or 2.46 times much from 2 months aged animal and slaughter yield has increased from 41.31 to 46, 56%. The content of visceral fat in the carcasses of goats is increased with age. At the 2 months age its content is only 0,09 kg, or 0.80% from the pair carcass weight, and 8-month were 0,65 kg, or 2.47%. During the period from 2 to 4 months of age among animals of both groups was sharply reduced absolute gain of live weight, and given indicator for males was lower (2.54 times) than the females (2.75 times). Despite that, the male goats were superior than female goats 39.9% in absolute growth. These patterns are will eventually determine live weight of experimental goat kids at the time of weaning. Live weight of male goats at this age has reached to 14.83 kg, respectively, female goats 11.45 kg, which is 29.5% less than males.
