Abstract

Scientific theoretical grounds of basic technological processes of grain crops processing are shown, namely: drying, breaking, blending and extruding. Technical equipment of groats enterprises and technological solutions for instant foodstuff production were analysed and assessed, as well as available production technologies, use and advantages of different types of flower in Kazakhstan and abroad. The information about the problems of processing poly-cereal crops into whole-milled flour and foodstuff of high readiness state is given. Modern production methods and main issues concerning the expansion of the range of cereal products made of poly-cereal stock of Kazakhstan selection are considered. The book is intended for PhD doctoral candidates and master's students of higher educational establishments with the specialization in "Technology of Processing Works" and "Technological machines and equipment", as well as for the representatives of business structures, interested in the market of grain and grain products.
