Abstract

The book gives the analysis of present state and tendencies of the grain crops production development in the Republic of Kazakhstan. Present problems of grain stock preparation for processing are examined. The existing production technologies, application and advantages of different kinds of flour in Kazakhstan and abroad are analyzed and evaluated. The issues concerning the expansion of the range of composite flour and foodstuff made of poly-cereal grain stock of Kazakhstan selection are examined. Information is given on the problems of processing polysaccharides and legumes in whole-milled flour. The book is intended for PhD doctoral candidates and master's students of higher educational establishments with the specialization in "Technology of Processing Works" and "Technological machines and equipment", as well as for the representatives of business structures, interested in the market of grain and grain products.
